Suitable for vegetarians 450g tomatoes 1 medium onion 1 small potato 50g butter or margerine 2 garlic cloves (optional) 1 bay leaf 2 tbsp tomato paste 450ml vegetable stock 450ml milk Sprig of coriander Salt & pepper to taste
Method:
Chop onion & potato. Quarter tomatoes. Melt butter & saute onion until transparent. Add potato, tomatoes, garlic, bay leaf, tomato paste & stock. Cover & simmer for 20 minutes. Remove from heat and stir in the organic milk. Remove bay leaf. Blend in small quantities in liquidiser. Sieve soup & adjust seasoning to taste.
