¾ pint milk I oz margarine 4 oz fine white breadcrumbs 4 oz tangy grated cheese 4 eggs, separated Pinch of cayenne Pepper and salt
Method:
Preheat oven to 350ºF. Bring the milk to the boil, then add the margarine, pepper, salt and cayenne. Stir in the breadcrumbs. Add the grated cheese; stir over a low heat until it has melted. Beat the egg yolks and add them. Let it cool slightly, then whip the eggs whites stiffly and fold them lightly into the mixture. Pour into a large greased soufflé dish or suitable ovenproof dish; it should not be more than three-quarters full to allow for rising. Bake for 40 minutes, or until golden brown and well risen. Serve at once.
