Suitable for vegetarians 800ml of milk
75g butter
3 tablespoons of strawberry jam
1 strip of lemon rind
50g sugar
3 eggs
150g breadcrumbs
pinch of salt
Method:
1) Bring milk, salt and lemon rind to the boil.
2) Pour over the breadcrumbs, butter and sugar.
3) Remove lemon rind.
4) Leave for 10 minutes to cool.
5) Beat up egg yolks and add to mixture when cool enough not to become scrambled.
6) Pour into buttered ovenproof dish and bake at 180C for 25 minutes
7) Take out, spread with jam and pile whipped egg whites (sprinkled with sugar) over the top
8) Return to oven for last 5 minutes to brown.
9) Serve with creme fraiche.
