Suitable for vegetarians An extra-special treat this - not for those on a low chloresterol diet though!
200g plain chocolate
40g butter
3 eggs
75g sugar
50g self-raising flour
Half a teaspoon of baking powder
1 tablespoon of rum
300ml whipping cream
Method:
Preheat oven to gas mark 5 (190C)
Gently melt chocolate. Remove from the heat and add butter. Stir until smooth.
Separate the eggs, whisk the yolks with the sugar until pale and fluffy. Beat in the chocolate mixture.
Sift the flour with the baking powder and blend into the mixture with the rum.
Whisk the egg whites until they stand in soft peaks and then fold in.
Pour into a buttered ring mould and bake in the centre of the oven for 30 minutes, or until a skewer inserted into the middle comes out clean.
Leave to cool then turn out onto a serving dish.
Whip the cream and pile into the centre of the cake, allowing it to flow down giving a snowy mountain effect.
