Bhallots, about 8 halved
Garlic clove, 1, thinly sliced
Bell pepper, 1 yellow or red, halved and deseeded
French stick, 1 liberal piece
Cornish brie, 110g, sliced into 2 wedges
Method:
1. Melt the butter in a frying pan and add the shallots and garlic, cooking them over a low heat until browned and crispy.
2. Meanwhile, grill the pepper halves until they begin to char, turning them once.
3. Push the shallots and garlic to one side of the frying pan, then place the French bread in, cut side down and allow the flavours to infuse through the bread. Let it brown for a few minutes and then put the pieces onto warmed plates.
4. Place the shallots, garlic and pepper on top of the bread and finally a wedge of brie. Grill for a few moments until the cheese begins to melt and serve immediately.
