Bristol chef’s campaign to get veal back on the menu. Barny Haughton, the eco-friendly chef of new restaurant Bordeaux Quay, argues in The Times that organically reared rose veal has a place on our tables, despite the fact only 1% of households currently eat it. According to Haughton, ‘if you drink milk, you pretty much have a duty to eat veal’ as it is a by-product of the milk industry and our responsibility to use it effectively.
