Unlike ordinary milk, organic cows are fed on grass and hay that isn't treated with pesticides, they are not fed on GM cattlefeed and are only given antibiotics when ill, unlike non organic cows.

Serves 4
2 tbsp organic olive oil
450g / 1lb organic pork sausages
For the batter:
125g/4oz organic plain flour
pinch salt
2 organic eggs
300ml / ¾ pint organic milk
2 organic garlic cloves, finely chopped
2 tbsp chopped fresh organic chives
1 Preheat the oven 220C/Gas 7. Heat the oil in a small roasting tin on the hob, tilting the tin so that the oil covers the bottom and sides. Add the sausages and place in the oven for 10 minutes, shaking the tin occasionally, until browned.
2 Meanwhile, make the batter: sift the flour and salt into a bowl. Make a well in the centre and add the eggs and a little of the milk. Whisk the eggs and milk together, gradually incorporating the flour to make a paste.
Gradually whisk in the remaining milk to make a smooth batter. Stir in the garlic and chives.
3 Pour the batter around the sausages and return to the oven. Reduce the oven temperature to 200C/Gas 6 and cook for 30-35 minutes, or until the batter is risen and golden.
